Instructions:
- Prepare the Laksa Paste:
- In a food processor or blender, combine all the paste ingredients and process until smooth.
- Cooking the Noodles:
- Soak rice vermicelli in warm water for 10 minutes to soften.
- Drain well before using.
- Make the Laksa Base:
- In a large pot, heat some oil over medium heat.
- Add the laksa paste and stir-fry until fragrant (about 2-3 minutes).
- Add coconut milk, fish sauce, tamarind paste, chicken stock, lemongrass, galangal, and candlenuts. Bring to a boil.
- Reduce heat and simmer for about 15 minutes.
- Cook the Protein:
- Add the chicken or shrimp to the pot and cook until just cooked through (about 3-5 minutes).
- Assemble the Laksa:
- Divide the noodles among bowls.
- Ladle the hot laksa base over the noodles.
- Top with quartered tomatoes, and serve garnished with fresh coriander leaves.
