Ingredients:

– 1 tbsp tomato paste
– 1 tsp ground cumin
– 1 tsp ground coriander
– 1 tsp turmeric
– 1 tsp salt
– 1/2 tsp black pepper
– 600g basmati rice, washed and soaked for at least 30 minutes
– Water or chicken stock
– Melted butter or ghee
– Fresh parsley or cilantro, chopped (for garnish)
Instructions:
1. In a large bowl, mix together the grated onions, minced garlic, vegetable oil, tomato paste, cumin, coriander, turmeric, salt, and black pepper. Add the cubed meat and toss well to coat it evenly with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
2. Preheat your grill to medium-high heat. Thread the marinated meat onto skewers, making sure not to overcrowd them.
3. Grill the kebabs for about 5-7 minutes on each side, or until they are cooked through and have a nice char on the outside. Remove from the grill and set aside.
4. Rinse the soaked rice thoroughly under cold water to remove excess starch. In a large pot, bring about 2 cups of water (or chicken stock) to a boil. Add the drained rice and a pinch of salt. Stir once, then reduce the heat to low, cover the pot with a tight-fitting lid, and let it cook for about 10-15 minutes, or until all the liquid has been absorbed and the rice is tender but still fluffy.
5. Remove the pot from the heat and let it sit covered for an additional 5-10 minutes to steam. Fluff the rice with a fork, then drizzle melted butter or ghee over it and mix well. Cover the pot again to keep the rice warm.
