Ingredients:
– 2 cups Basmati Rice
– 1 kg Chicken (or Lamb)
– 3 tbsp Oil
– 1 large onion, finely chopped
– 5 garlic cloves, crushed
– 1 inch piece of ginger, grated
– 1 tsp Cumin powder
– 1 tsp Coriander powder
– 1 tsp Paprika
– 1/2 tsp Turmeric powder
– 3 Cardamom pods, crushed
– 2 Bay leaves
– 4 Cloves
– 6-7 Black Peppercorns
– Salt to taste
– 1 tomato, diced
– 2 cups water
– 1/2 cup chopped coriander
– 3 tbsp Lemon juice
Instructions:
1. Rinse the rice thoroughly in cold water and soak it for at least 30 minutes.
2. Wash the chicken or lamb and cut it into bite-sized pieces.
3. Heat oil in a large pan over medium heat, add the onion, garlic, and ginger. Sauté until the onions are golden brown.
4. Add cumin powder, coriander powder, paprika, turmeric powder, cardamom pods, bay leaves, cloves, black peppercorns, salt to taste, tomato, and chicken or lamb. Stir well to combine all the spices with the meat.
5. Cook the meat for 10-15 minutes until it is browned on all sides.
6. Add the soaked rice to the pan and stir well to coat the rice with the spice mixture.
7. Pour in the water, bring it to a boil, then reduce the heat to low, cover the pan with a lid, and let it simmer for 20-25 minutes or until the rice is cooked and all the water has been absorbed.
8. Once the rice is cooked, fluff it up with a fork, add chopped coriander and lemon juice, mix well, and serve hot with yogurt, salad, or pickles on the side.
