Naengmyeon

Naengmyeon is a popular Korean cold noodle dish that offers a refreshing break from hot summer days. The dish consists of buckwheat noodles served in a chilled broth with various toppings such as sliced cucumber, radish, and beef. Ingredients:
– 12 oz Korean buckwheat noodles (naengmyeon)
– 4 cups cold water
– 2 cups ice cubes
– 1/3 cup rice vinegar
– 1/4 cup soy sauce
– 2 tbsp sugar
– 1 tsp sesame oil
– 1 small cucumber, julienned
– 1 medium carrot, julienned
– 6 oz beef brisket or pork shoulder, thinly sliced
– Salt and pepper to taste
– Garnishes: chopped scallions, crushed ice, mustard leaves (muk)

Instructions:

1. Bring a large pot of salted water to a boil. Add the naengmyeon noodles and cook for 3-5 minutes or until al dente. Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

2. In a large bowl, combine the cold water, ice cubes, rice vinegar, soy sauce, sugar, and sesame oil. Stir well to mix.

3. Divide the cooked noodles among four serving bowls. Pour the chilled broth over the noodles.

4. Top each bowl with julienned cucumber, carrot, and sliced beef or pork. Season the meat with salt and pepper to taste.

5. Garnish each bowl with chopped scallions, crushed ice, and mustard leaves (muk) if desired. Serve immediately. Enjoy your refreshing Korean naengmyeon!
