Chicken Yassa Recipe

- 1/2 teaspoon cayenne pepper (adjust to taste)
- 4 large onions, thinly sliced
- 6 cloves garlic, minced
- Vegetable oil or olive oil for cooking
- Fresh cilantro or parsley for garnish
Instructions:
- Marinate the Chicken: In a bowl, combine mustard, lime juice, paprika, cayenne pepper, salt, and pepper. Mix until well combined. Add the chicken thighs to the mixture, ensuring they are fully coated. Cover and refrigerate for at least 2 hours or overnight for best results.
Prepare the Onions: In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the sliced onions. Cook slowly, stirring occasionally, until the onions have caramelized to a deep golden brown color. This process can take about 20-25 minutes. Add garlic and cook for another minute.
Cook the Chicken: Remove the chicken from the marinade, shaking off excess liquid. In a large skillet or oven-safe pan over medium-high heat, add enough oil to coat the bottom of the pan.
