- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1/4 cup water
- 2 tablespoons cornstarch
Instructions:
- Preheat the oven to 300°F (150°C).
- In a large bowl, whisk together soy sauce, Gochujang, brown sugar, garlic, ginger, and Korean chili flakes. Add the beef short ribs and marinate for at least 2 hours or overnight.
- Remove the beef from the marinade and place it in a large Dutch oven or heavy pot with a lid. Reserve the marinade.
- Cook the rice cakes according to package instructions. Typically, they are boiled in water for about 10-15 minutes, then drained and rinsed with cold water. Set aside.
- In the same pot as the beef, add the reserved marinade and bring it to a boil. Reduce the heat to low and simmer for 2 hours or until the beef is tender.
- While the beef is cooking, prepare the sauce by whisking together soy sauce, Gochujang, brown sugar, Korean chili flakes, garlic, ginger, and water in a small bowl. Add the cornstarch and whisk until smooth.
- After the beef has cooked for 2 hours, add the prepared sauce to the pot and stir to combine. Simmer for an additional 30 minutes or until the sauce has thickened slightly.
- To serve, place a portion of braised beef on a plate, accompanied by a few rice cakes. Spoon some of the savory sauce over the top. Garnish with toasted sesame seeds and chopped green onions if desired.
Tips:
- Use a slow cooker instead of the oven to cook the beef for 6-8 hours.
- Adjust the level of spiciness to your liking by adding more or less Korean chili flakes.
- Serve with additional toppings such as kimchi, pickled ginger, or chopped scallions.
