– 1 teaspoon cumin
– Salt and pepper to taste
– 8 flour tortillas (6 inches in diameter)
– 2 cups shredded cheese (cheddar or Mexican blend)
Instructions:
1. Preheat a large skillet over medium heat with the olive oil. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
2. Add the cooked chicken to the skillet along with the garlic powder, cumin, salt, and pepper. Stir to combine and cook for another 3-4 minutes or until heated through.
3. Place one flour tortilla in the skillet. Sprinkle 1/4 cup of shredded cheese over half of the tortilla. Top with 1/4 of the chicken mixture. Fold the other half of the tortilla over to create a half-moon shape. Cook for about 2 minutes per side or until the tortilla is golden brown and crispy, and the cheese has melted.
4. Remove the quesadilla from the skillet and place it on a cutting board. Cut into 3 or 4 triangles before serving with salsa, sour cream, or guacamole. Repeat steps 3-4 to make the remaining quesadillas. Enjoy!
