Instructions:

  1. Preheat the oven to 375°F (190°C).

  3. In a large pan, heat 2 tablespoons olive oil with butter over medium-high heat. Add onion and garlic, cooking until softened (about 5 minutes). Transfer the cooked onions to a mixing bowl.
  4. Combine the chopped spinach, eggs, feta cheese, Parmesan or Romano cheese, nutmeg, salt, and pepper in the mixing bowl with the cooked onions. Mix well.
  5. Working one at a time, brush each phyllo dough sheet lightly with olive oil (on both sides). Stack the sheets on top of each other, covering them with a damp towel to prevent drying.
  6. Lay down two layers of phyllo dough in an oiled baking dish, allowing them to slightly overlap. Brush with olive oil and repeat for one more layer.
  7. Spread the spinach mixture evenly over the layers of phyllo dough.
  8. Continue layering the remaining phyllo sheets (brushing each with olive oil), making sure there’s enough to cover the entire spanakopita. Brush the top layer with oil.
  9. Cut the spanakopita into serving portions using a sharp knife. Bake for 40-50 minutes until golden brown.
  10. Let it cool slightly before serving, and enjoy!
