
Machboos is a traditional Arabian dish that consists of fragrant basmati rice cooked with various meats or vegetables. It’s commonly found in countries such as Bahrain, Kuwait, Oman, and the United Arab Emirates. The aromatic spices used in the recipe give it an intense flavor that pairs perfectly with the tender meat or vegetables.
Here is a simple recipe on how to cook Machboos:
Ingredients:
– 2 cups basmati rice
– 4 cups water
– 1/2 tsp saffron threads (optional)
– 1/2 cup vegetable oil
– 1 large onion, chopped
– 3 garlic cloves, minced
– 1 kg chicken or lamb meat, cut into bite-sized pieces
– 2 cinnamon sticks
– 4 cardamom pods, cracked open
– 5 cloves
– 1 tsp ground coriander
– 1 tsp turmeric powder
– Salt to taste
– Chopped fresh coriander leaves for garnish
Instructions:
1. Rinse the basmati rice in cold water until the water runs clear, then soak it in plenty of water for at least 30 minutes.
2. In a large pot, combine the water and saffron threads (if using). Bring to a boil over high heat.
3. Add the drained basmati rice to the boiling water and stir once. Reduce the heat to low and let it simmer until the rice is almost cooked but still firm in the center, about 10-12 minutes. Remove from heat.
4. In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
5. Add the minced garlic and cook for another minute.
6. Add the chicken or lamb meat to the pan and stir well. Cook until the meat is browned on all sides.
7. Add the cinnamon sticks, cardamom pods, cloves, ground coriander, turmeric powder, and salt to taste. Stir well to combine.
8. Pour enough water into the pan to cover the meat halfway. Bring it to a boil over high heat.
9. Reduce the heat to low and let it simmer for about 20-30 minutes until the meat is tender and most of the liquid has evaporated.
10. Fluff up the cooked rice with a fork. Spread it out on a serving platter or in a large shallow dish.
11. Place the cooked meat mixture on top of the rice. Garnish with chopped fresh coriander leaves.
12. Serve hot and enjoy your delicious Machboos!
This recipe makes enough for 4-6 servings. You can also add vegetables such as tomatoes, carrots, or peas to the meat mixture if desired.
