Ingredients:
– 4 large eggs
– 2 medium potatoes, grated
– 1/2 onion, diced
– 1/2 bell pepper, diced
– 2 tbsp olive oil
– Salt and pepper to taste

1. Preheat a non-stick skillet over medium heat. Add 1 tablespoon of olive oil and let it heat up.
2. Add the grated potatoes into the heated pan, spreading them out evenly. Season with salt and pepper. Cook for about 5 minutes or until golden brown, then flip the hash browns and cook for another 5 minutes. Remove from skillet and set aside.
3. In the same skillet, add the remaining tablespoon of olive oil and heat it up. Add diced onion and bell pepper, and sauté until they become soft and translucent.
4. Crack the eggs into the skillet, evenly spacing them apart. Cook for about 3-4 minutes or until the whites are set but the yolks are still runny. Season with salt and pepper to taste.
