Recipe: Shchi with Fresh Beets and Dill
Ingredients:
- 2 large beets
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced

- Chill the soup in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Serve the shchi cold, garnished with chopped fresh dill.

- You can also use cooked beets from a can or jar if you prefer.
