– 1/4 cup soy sauce
– 2 tbsp mirin (sweet rice wine)
– 2 tbsp sake
– 1 tbsp sugar
– 1 tsp grated ginger
– 1 green onion, thinly sliced
– Wasabi paste (optional)
Instructions:
1. Cook the soba noodles according to package instructions. Drain and rinse them under cold water to stop the cooking process and remove excess starch. Set aside.
2. In a small saucepan, combine dashi or water, soy sauce, mirin, sake, sugar, and grated ginger. Bring to a boil, then reduce heat and let simmer for 5-7 minutes until the sauce thickens slightly.
