Instructions:
1. Preheat your oven to 375°F (190°C).

3. Heat the olive oil in a large skillet over medium heat. Add the bell pepper, onion, and mushrooms and sauté until tender, about 5-7 minutes.
4. In a large mixing bowl, combine the toasted bread, cooked vegetables, shredded cheese, salt, and black pepper. Mix well.
5. In another bowl, whisk together the eggs and milk. Pour this mixture over the bread and vegetable mixture and stir until everything is evenly coated.
6. Optional: Add any additional ingredients (ham, sausage, spinach, tomatoes, or herbs) to the mixture and stir to combine.
7. Pour the mixture into a greased 9×13 inch baking dish. Let it sit for about 30 minutes to allow the liquid to absorb into the bread.
8. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
9. Serve warm with fruit on the side. Enjoy!
