– 2 tbsp olive oil
– 1 large onion, chopped
– 3 garlic cloves, minced
– 1 tsp ground cinnamon
– 1 tsp ground ginger
– 1/2 tsp ground turmeric
– 1/2 tsp ground coriander
– 1/4 tsp ground allspice
– 1/4 tsp ground nutmeg
– 1/4 tsp cayenne pepper (optional)
– Salt and pepper, to taste
– 1 can (14.5 oz) diced tomatoes, undrained
– 1 cup chicken or beef broth
– 1/2 cup dried apricots, halved
– 1/2 cup green olives, pitted
– 1/4 cup chopped fresh cilantro or parsley
Instructions:
1. Heat the olive oil in a large tagine pot or Dutch oven over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Stir in the cinnamon, ginger, turmeric, coriander, allspice, nutmeg, cayenne pepper (if using), salt, and pepper. Cook for another minute to toast the spices.
3. Add the chicken or beef, diced tomatoes with their juice, and broth to the pot. Bring to a simmer, then reduce the heat to low and cover. Let cook for about 1 hour, or until the meat is tender.
4. Stir in the dried apricots and green olives. Cook for an additional 15-20 minutes, or until the fruits are plump and the sauce has thickened slightly.
