Gamjatang: A Hearty Korean Pork Bone Stew
Ingredients:
- 500g pork bones (preferably with some meat still attached)
- 2 tablespoons soy sauce
- 1 tablespoon rice wine or mirin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 cups of water
- 2 potatoes, peeled and cut into bite-sized pieces
- 1 turnip, peeled and cut into bite-sized pieces
- 1 onion, cut into wedges
- 2 garlic cloves, minced
- 1 tablespoon chopped green onions (garnish)
Instructions:
- Rinse the pork bones under running water and set aside to drain.
- In a large pot or soup pot, combine the pork bones with soy sauce, rice wine, salt, and pepper. Add just enough water to cover the bones and bring it to a boil over high heat.
- Skim off any foam or impurities that float to the surface and discard.
- Once the boiling stops and a rich broth forms, add the potatoes, turnip, and onion. Simmer for about 1 hour, or until the meat is tender and falls off the bone.
- Add the garlic and simmer for another 10 minutes.
- Serve the stew in bowls, garnished with chopped green onions.
