Refried beans


Refried beans are a delicious and filling dish that originated in Mexico. They are made by cooking pinto or black beans until they are soft, then mashing them with spices and fat. This results in a creamy and flavorful bean paste that can be served as a side dish or used as a base for other Mexican dishes like burritos, tacos, and enchiladas.

Ingredients:
– 1 pound dried pinto beans, rinsed and drained
– 6 cups water
– 2 tablespoons vegetable oil
– 1 large onion, finely chopped
– 4 cloves garlic, minced
– 2 teaspoons ground cumin
– Salt to taste

Instructions:
1. In a large pot, combine the beans and water. Bring to a boil over high heat, then reduce the heat to low and simmer until the beans are tender, about 1-2 hours.
2. Drain the beans, reserving 1 cup of the cooking liquid.
3. In a large skillet, heat the vegetable oil over medium heat. Add the onion and cook until softened, about 5 minutes.
4. Add the garlic and cumin to the skillet and cook for another minute.
5. Add the cooked beans to the skillet and mash them with a potato masher or the back of a large spoon until they reach your desired consistency. You can leave some whole beans for texture if you like.
6. Stir in enough of the reserved cooking liquid to achieve a creamy consistency. The amount needed will depend on how thick you want the refried beans.
7. Season with salt to taste and serve hot. Enjoy!
