Fiji kokoda


Fiji Kokoda is a refreshing fish salad that originated in Fiji. It’s made with fresh fish, coconut milk, lime juice, onions, tomatoes, cucumber, and herbs like coriander and mint. Ingredients:
– 500g of fresh fish (snappers, mackerels, or tuna)
– 1/2 cup coconut milk
– 2 limes, juiced
– 1 onion, finely diced
– 2 tomatoes, chopped into small cubes
– 1 cucumber, peeled and chopped into small cubes
– 1 bunch coriander, chopped
– 1 bunch mint, chopped
– Salt and pepper to taste

Instructions:
1. Rinse the fish under running water and pat dry with paper towels. Cut it into bite-sized pieces.
2. In a large bowl, combine coconut milk and lime juice. Stir well until they are mixed thoroughly.
3. Add the diced onion, chopped tomatoes, cucumber cubes, coriander, and mint to the bowl with the coconut mixture. Mix well.
4. Season the salad with salt and pepper according to your taste preference.
5. Gently fold in the fish pieces until they are evenly coated with the coconut lime dressing.
6. Cover the bowl with cling film and refrigerate for at least an hour before serving. This will allow the flavors to meld together.
7. When ready to serve, garnish the salad with extra coriander leaves and mint.
8. Enjoy your Fiji Kokoda as an appetizer or a light lunch!

Note: You can also add other ingredients such as avocado, chili, or ginger to give it some extra flavor if you prefer. Adjust the seasoning according to your taste preferences.
