Cachupa


Cachupa is a traditional Portuguese dish that originated in the Azores archipelago. It’s a hearty and flavorful stew made with various types of beans, meat, corn, and sausage. The dish is usually served during special occasions or family gatherings, as it is considered a symbol of unity and abundance. Here’s a simple recipe to cook Cachupa:

Ingredients:
– 1 lb dried white beans (navy beans or cannellini beans)
– 1 lb smoked sausage, sliced
– 1 lb beef chuck roast, cut into bite-sized pieces
– 2 large onions, chopped
– 4 cloves garlic, minced
– 2 cans (15 oz each) diced tomatoes
– 3 cups corn kernels (fresh or frozen)
– 6 cups water
– Salt and pepper to taste
– Olive oil for cooking
– Fresh parsley for garnish

Instructions:

  1. Rinse the beans thoroughly and pick out any stones or debris. Soak the beans in water overnight, or for at least 8 hours. This will help reduce cooking time.

  2. In a large pot, heat some olive oil over medium-high heat. Add the sliced smoked sausage and cook until browned on all sides, about 5 minutes. Remove the sausage from the pot and set aside.

  3. Add the beef chuck roast to the pot and cook until browned on all sides, about 7 minutes. Remove the beef from the pot and set it aside with the sausage.

  4. Lower the heat to medium and add the chopped onions to the pot. Cook until the onions are softened and translucent, about 5 minutes.

  5. Add the minced garlic and cook for another minute until fragrant.

  6. Stir in the diced tomatoes with their juice, the cooked sausage, beef, and soaked beans (along with their soaking water). Add the corn kernels as well.

  7. Season the mixture with salt and pepper to taste.

  8. Bring the pot to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender and the meat is falling apart. Stir occasionally to prevent sticking.

  9. Taste the cachupa and adjust seasoning as needed. Serve hot, garnished with fresh parsley. Enjoy your delicious Cachupa!
