Minchee (Korean Savory Rice Porridge)
Ingredients:
 – 2 cups of short-grain rice
 – 6 cups of chicken or vegetable broth
 – 1 pound of ground beef or pork
 – 3 cloves of garlic, minced
 – 1 inch of ginger, minced
 – 2 green onions, chopped
 – 1 carrot, sliced
 – 1 cup of snow peas
 – 2 tablespoons of soy sauce
 – 1 tablespoon of sesame oil
 – Salt and pepper to taste
 – Green onions for garnish (optional)
Instructions:
- Rinse the rice until water runs clear, then soak it in water for at least 30 minutes. Drain and set aside.
 - In a large pot or dutch oven, sauté the garlic and ginger over medium heat until fragrant. Add the ground meat and cook until browned.
 - Add the drained rice and stir to combine. Pour in the broth and bring it to a boil.
 - Reduce the heat to low, cover, and simmer for about 20 minutes.
 - Add the green onions, carrot, and snow peas. Simmer for another 10 minutes until the vegetables are tender.
 - Drizzle in sesame oil and stir in soy sauce. Season with salt and pepper to taste.
 - Garnish with additional chopped green onions if desired, and serve hot.
