Minchee

Minchee is a popular Korean dish that is perfect for those who love savory flavors and soft, tender meat. It’s a one-pot wonder that’s easy to make and feed a crowd.

Minchee (Korean Savory Rice Porridge)

Ingredients:
– 2 cups of short-grain rice
– 6 cups of chicken or vegetable broth
– 1 pound of ground beef or pork
– 3 cloves of garlic, minced
– 1 inch of ginger, minced
– 2 green onions, chopped
– 1 carrot, sliced
– 1 cup of snow peas
– 2 tablespoons of soy sauce
– 1 tablespoon of sesame oil
– Salt and pepper to taste
– Green onions for garnish (optional)

Instructions:

  1. Rinse the rice until water runs clear, then soak it in water for at least 30 minutes. Drain and set aside.
  2. In a large pot or dutch oven, sauté the garlic and ginger over medium heat until fragrant. Add the ground meat and cook until browned.
  3. Add the drained rice and stir to combine. Pour in the broth and bring it to a boil.
  4. Reduce the heat to low, cover, and simmer for about 20 minutes.
  5. Add the green onions, carrot, and snow peas. Simmer for another 10 minutes until the vegetables are tender.
  6. Drizzle in sesame oil and stir in soy sauce. Season with salt and pepper to taste.
  7. Garnish with additional chopped green onions if desired, and serve hot.
