Akara

Akara is a popular Nigerian snack that consists of black-eyed peas, onions, pepper, and spices. It can be enjoyed as part of breakfast, lunch or dinner and is typically served with tomato sauce and plantain chips.

The following recipe shows how to make akara:

Ingredients:
– Black-eyed peas (1 kg)
– Onions (2 medium)
– Pepper (3-4 large)
– Garlic (6 cloves)
– Salt and Maggi stock cubes to taste
– Ground crayfish or dried shrimp (to taste)
– Oil for frying

Instructions:
1. Soak the black-eyed peas in water overnight, then drain them thoroughly and set aside.
2. Heat oil in a pot on medium heat and add the chopped onions and garlic. Fry until softened, about 5 minutes.
3. Add the drained black-eyed peas to the pan and stir until they are coated with oil.
4. Cover the pan and cook over low heat for about an hour or until the peas are tender.
5. When the peas are done, remove them from the heat and set aside to cool slightly.
6. In a blender, combine the cooked black-eyed peas with onions, pepper, and spices (salt and Maggi stock cubes). Blend until smooth.
7. Heat oil in a pot or deep fryer and fry small portions of the akara mixture until golden brown on each side, about 5-10 minutes per batch.
8. Serve hot with tomato sauce and plantain chips.
